Structure

The transversal cut of a hen egg allows us to distinguish clearly the distinct parts of it.

Corte transversal del huevo
Transversal cut of an egg.

In a hen egg, the white is about 57.3% of the whole weight, the yolk is 30.9% and the shell is 11.5%. When we separate an egg in several parts 0.3% of its weight is lost.
